Massimo Falsini

Massimo Falsini is currently the Executive Chef at the Four Seasons Resort in Hualalai , the first and only AAA Five-Diamond and Forbes Five-Star Resort in Hawaii. Originally from Rome, Chef Massimo Falsini has strong roots in European, and particularly Italian, cuisine. In the kitchen, Chef Falsini loves action, transformation and coaching; not just the static figure of a chef supervising a kitchen. He keeps his quality standards high by always aiming to express his personality through his dishes, incorporating his knowledge of flavors and richness of the Italian landscape.

Chef Massimo Falsini has a 24-year long history in the culinary world, in many esteemed establishments worldwide. He began his culinary career in Rome at the Michelin-starred Trattoria Felice a Testaccio, before serving at the Michelin-starred restaurant “Baby” at Aldrovandi Palace, in Villa Borghese, Rome and at the Grand Hotel Trieste & Victoria in Abano Terme Padova, Italy.

"The magic in cooking is the ability to give others so many sensations in such a limited space, a dish! In the volatility of a bite."

Launching his career as Executive Chef for the world famous Harry’s Bar, where he earned a Michelin Star, he later became the Head Italian Chef at the Grand Hyatt Amman, Jordan. His position in Amman brought him to the Hilton in Abu Dhabi, where he cooked for Head of States and royal families on a daily basis. Returning home to Italy in 2008, he became the Executive Chef and Director of Food & Beverage for Ragosta Hotels in Sicily.

He was later appointed as the Executive Chef of Formula Ferrari World Abu Dhabi, the world’s first Ferrari theme park and the largest attraction of its kind. There, he was responsible for the 6 food and beverage outlets, leading a theme of 106 chefs, most with experience in Michelin starred restaurants. Chef Falsini then served as the Executive Chef of Waldorf Astoria Orlando, leading the famous restaurant, Bull and Bear.
