Israel Pérez is a native of Mayaguez, Puerto Rico, and attended the University of Puerto Rico and the University of Florida. Mr. Pérez then gained his Master Court of Sommeliers first-level certification. He is a cultured man who has traveled the world in search of food and wine knowledge to enrich his staff and distinguish himself as an expert of cuisine.
Mr. Pérez choreographs the elegant dining room of Victoria & Albert’s at the Disney Grand Floridian Resort & Spa. He strives daily to offer a magical dining experience that makes every guest feel special, catering to the needs of loyal diners and making newcomers feel like old friends. The consummate professional, his attention to detail creates a flawless evening.
Pérez has been a great asset to Walt Disney World restaurants for nearly 20 years. He has gained expertise working in their Helm dining rooms at California Grill, Narcoosee’s, Cítricos and Artist Point. In his years of experience Mr. Pérez has developed an innate understanding of Chef Scott Hunnel’s cuisine, and uses this knowledge to coach his staff to offer diners an exquisite wine that perfectly complements the innovative cuisine. A significant part of his job is heading up daily discussions of wines and assessing his staff’s knowledge of the grape.
It is under Mr. Perez’s direction that the restaurant has been awarded with AAA Five Diamond award now for the 14th consecutive year. It is an elite few, with only 10 restaurants in the United States, who can say they have been at the top of the AAA awards for 14th consecutive years. Out of total 28,000 restaurants approved by AAA, fewer than one-quarter percent achieve this prestigious distinction. Mr. Pérez’s expertise and determination has been a large contribution to earning this achievement.
