Clayoquot Wilderness Resort is pleased to announce the appointment of Michael Pataran to the role of Executive Chef.  

Pataran brings nearly 30 years of experience from around the globe as an award-winning chef, sommelier, certified sake professional and educator, food writer, restaurant designer and consultant. For the past three years, Pataran resided in Cambodia, where he opened Agave Cocina Restaurant in Phnom Penh and served as Executive Chef and F&B Director at Song Saa Private Island in 2015-2016.

Of his decision to pack up and move 12,000km to join the Clayoquot team in the remote wild of British Columbia, Chef Pataran says he couldn’t pass up an opportunity to be at one of the most incredible resorts and food regions in the world.

“The bounty available on Vancouver Island provides a limitless source of inspiration via remarkable ingredients, supplied by truly exceptional local farmers, fishermen, growers and artisan purveyors. My goal is to showcase the wondrous beauty of this region by complimenting these ingredients with my culinary artistry, techniques and learned repertoire gained from my many years of extensive international travel and cultural observations.”

The Ontario native honed his culinary skills throughout Europe, Australia, and Southeast Asia before settling back in Toronto at some of the city’s critically acclaimed restaurants including Monsoon, Rain, the Windsor Arms Hotel and Wildfire at Taboo Resort. Pataran is known for challenging traditional culinary boundaries with his unique ‘Faith’ tasting menus and artful Asian inspired dishes.

His impressive list of accolades include being crowned the 2004 IAAC World International Champion Chef by defeating six other finalists from resorts and hotels from around the world. Pataran also received the utmost honour in 2003 by being invited to cook and host a sold-out luncheon and dinner at the prestigious James Beard House in New York City as the guest chef for Canada Day; only the second person to ever execute a luncheon and dinner event on the same day.

Clayoquot Wilderness Resort General Managers Bradley Goian and Antonella Puglisi are thrilled to welcome Pataran’s leadership and experience in the kitchen and beyond. Pataran is also developing a new top-class beverage program for the Ivanhoe Lounge, the resort’s glass-enclosed waterfront lounge bar, currently under renovation for the upcoming 2018 season.
